When it’s hot – really hot – the last thing I want to do is cook or eat something hot. I’d rather just plop myself into an icy cold tub and pray for cooler temperatures. But you know we all must eat to keep our strength and go about our business.
I was invited to a potluck dinner a couple weeks ago during the throes of the heat wave. My contribution was vichyssoise. It’s a delicious cold soup made with potatoes and leeks. My Irish heritage causes me to adore anything with potatoes and I do love anything related to onions. So it was the perfect dish for me, never mind my friends.
I looked through several different recipes and naturally came back to Julia Child’s classic. I love Julia Child’s cooking style. She had a sense of humor in the kitchen. Her dancing chicken was hilarious and whenever something flopped, she carried on with great aplomb.
Her vichyssoise recipe was really undemanding. I diced potatoes and thinly sliced leeks, dumped into all into a soup pot, added water, salt and pepper and let it simmer away. At the end, I used an immersion blender to make the consistency creamy and stowed in the fridge for later.
